Recipe of the Issue: “Be My Valentine” cupcakes

Valentine’s Day Strawberry Chocolate Cupcakes


  • One box of chocolate cake mix


  • 1 cup (2 sticks) unsalted butter, softened
  • 6-8 cups of powdered sugar
  • 2-4 tablespoons of milk
  • ⅓ cup of strawberry glaze (recipe below)

Strawberry Glaze:

  • 1 cup of fresh strawberries, clean and mashed
  • 1 cup of sugar
  • 3 tablespoons of cornstarch 
  • ¾ cup water
  • Optional: A few drops of red food coloring


  1. Start with making the Strawberry Glaze. In a saucepan combine sugar and cornstarch. Then, stir in the water and mashed strawberries.
  2. Bring to a boil while continually stirring (add in food coloring if desired)
  3. Cook and stir for 3 mins until thick
  4. Remove from heat and transfer to a bowl; allow to cool for 10-15 mins
  5. If strawberries aren’t smooth, you can use a food processor/blender.
  6. To make cupcakes, follow the directions on the box and allow to cool
  7. To make frosting, add butter to a large bowl and beat until smooth and creamy. Gradually add powdered, alternating with milk.
  8. Add ⅓ cup of strawberry glaze to frosting and add more powdered sugar; continue to add powdered sugar until frosting reaches desired consistency.
  9. Pipe frosting onto cupcakes and you’re done!
