Valentine’s Day Strawberry Chocolate Cupcakes
Cupcakes:
- One box of chocolate cake mix
Frosting:
- 1 cup (2 sticks) unsalted butter, softened
- 6-8 cups of powdered sugar
- 2-4 tablespoons of milk
- ⅓ cup of strawberry glaze (recipe below)
Strawberry Glaze:
- 1 cup of fresh strawberries, clean and mashed
- 1 cup of sugar
- 3 tablespoons of cornstarch
- ¾ cup water
- Optional: A few drops of red food coloring
Steps:
- Start with making the Strawberry Glaze. In a saucepan combine sugar and cornstarch. Then, stir in the water and mashed strawberries.
- Bring to a boil while continually stirring (add in food coloring if desired)
- Cook and stir for 3 mins until thick
- Remove from heat and transfer to a bowl; allow to cool for 10-15 mins
- If strawberries aren’t smooth, you can use a food processor/blender.
- To make cupcakes, follow the directions on the box and allow to cool
- To make frosting, add butter to a large bowl and beat until smooth and creamy. Gradually add powdered, alternating with milk.
- Add ⅓ cup of strawberry glaze to frosting and add more powdered sugar; continue to add powdered sugar until frosting reaches desired consistency.
- Pipe frosting onto cupcakes and you’re done!
