Spam Musubi

Ingredients:

Rice:

½ cup of short grain rice

½ cup of water

1 teaspoon of sugar

¼ teaspoon of kosher salt

1 tablespoon of rice vinegar

 

Spam Musubi:

1 tablespoon of canola oil

¼ Spam, sliced in half

1 tablespoon of water

1 tablespoon of soy sauce

1 tablespoon of sugar

2 2 inch strips of nori

 

Preparation

  1. Rinse the rice in water until it runs clear.
  2. Combine the washed rice and water in a pot and boil at medium-high heat. Bring the heat down to a simmer for 10 minutes. Alternatively, if you have a rice cooker, you can use that.
  3. Combine the sugar, salt and vinegar in a microwave safe bowl and microwave until the sugar is dissolved (approximately one minute).
  4. Combine the rice and vinegar mixture in a medium bowl and stir to combine.
  5. Heat the canola oil in a large skillet over medium high-heat. Add the Spam and cook until golden brown and crispy (approximately two to three minutes).
  6. Whisk the water, soy sauce and sugar in a small bowl.
  7. Reduce the heat to low and pour the soy sauce mixture in the skillet. Let the sauce get thick and coat the Spam evenly in the glaze. Remove the pan from the heat.
  8. Clean and line the Spam can with plastic wrap. Pack ⅓ cup of rice in the bottom of the can and press firmly. Place Spam on top of the rice and press firmly again. Lift the rice and Spam by removing the plastic wrap and repeat.
  9. Lay a strip of nori down on its shiny side. Place the rice and Spam centered on top and wrap the nori around, with a few grains of rice to seal. Repeat with remaining ingredients.
